It's been a while, but the answer to that one is yes.

As far as I remmeber, yes, that's the normal way to do it.  ADFS can
handle 4 winchesters, and IIRC that's in the form of two Adaptecs with
two disks each.

Yes, that's almost certainly the fastest way, without esoteric
operations like connecting the Adaptec to a PC SCSI bus (which might be
problematic).
